Ever since we started eating Paleo, I cook more than I ever, but I wanted to make sure that we didn’t fall into the baked-chicken-and-steamed-vegetable rut. Since we don’t eat pasta or rice, that would have been so easy to do. I am thankful for all the wonderful Paleo cookbooks that have made Paleo eating exciting and delicious in my house.
I made this meal, Better Butter Chicken, from the Everyday Paleo cookbook. It’s the Paleo version of the Indian food staple, Butter Chicken. Instead of rice, the chicken is on a nice bed of sautéed red chard. The chicken is so flavorful, my family loves it. I am thankful for delicious Paleo meals!
